Join us for this workshop on the fundamentals and flavors of fermentation.
Fermentation is a simple and low-cost way to preserve the harvest, and a powerful way to restore health from the inside out. Faith Gilbert of Letterbox Farm Collective will lead the group through a hands-on preparation of several lacto-fermented foods, including Ginger Carrots, Beet Kvass, Preserved Lemons and a Soda. Throughout the evening, David Chicane, Chef/Owner of Hudson Food Studio, will be preparing several plates inspired by these ingredients that we will all enjoy over dinner accompanied by wine from Hudson Wine Merchants.
The workshop and dinner will take place in the demonstration kitchen at Valley Variety, at 705 Warren Street in Hudson.
Each person will take-home jars of fermented good, recipes, a troubleshooting guide, and starter culture for a fermented soda.
